Spinach Borani

9 oz. spinach

2 cloves garlic, minced

1 onion, chopped

7 oz. Greek-style yogurt

1/4 C walnuts, chopped

1 t. dried mint

Cook spinach in 1/2 C boiling water for 5 minutes; drain and chop. Saute garlic and onion until softened. Mix with spinach and let cool. Mix in yogurt, walnuts, and mint, and serve chilled.
