Roasted Baby Cabbages

8 baby cabbages

Melted butter or light-flavored oil (I like sunflower)

Possible garnishes:  salt, freshly-ground black pepper, lemon zest, parmesan, mustard, minced parsley or chervil

Preheat oven to 350 degrees.  Slice cabbages in half lengthwise.  Place halves cut side down on a buttered or oiled baking sheet in the oven.  Brush melted butter or oil over the tops of the cabbage.  After 25 minutes, turn the halves and brush the tops with butter or oil if they look dry.  Cook for 20 minutes more.  Garnish to taste and serve hot with your hearty winter meal (goes well with baked winter squash and big bowl of soup).  Simple!
